Sylvestre
About This Spot
Stepping into Sylvestre feels like entering a refined, yet inviting retreat tucked into the vibrant heart of Polanco. The atmosphere strikes a delicate balance between polished elegance and unhurried comfort, where conversations flow easily and the pace invites you to settle in without rush. Warm lighting and thoughtful details create a quietly sophisticated setting that encourages lingering over both company and cuisine.
At Sylvestre, dining unfolds as a nuanced exploration rather than a checklist of dishes. The kitchen’s fusion of Argentinian chophouse traditions with Mexican warmth turns every plate into a moment of discovery—whether it’s the charred succulence of a perfectly grilled octopus or the richly layered textures of a finely aged steak. Accompanying these highlights, sides like pillow-soft potatoes or delicately seasoned vegetables appear as thoughtful companions rather than mere add-ons, drawing you deeper into the experience.
What elevates the meal here is the attention paid not just to flavors, but to the rhythms of the evening itself. Drinks crafted with care—whether a smoky café Americano or a lively Aperol Spritz—seem made to mirror the setting sun outside, completing the sense that this is as much a pause in the day as it is a shared celebration around the table. Service flows with a calm attentiveness, aware of personal rhythms without intrusion, lending the entire experience an easy intimacy.
In this corner of CDMX, Sylvestre quietly claims its space as a destination where thoughtful food meets a genuine sense of place. Whether you arrive after a day of wandering the city or step in as a deliberate occasion, it’s a restaurant that welcomes you with both sincerity and style—inviting you to savor each detail, each human moment, as part of the meal’s unfolding story.

Week in Mexico city is not enough to really sample the local food options. This was the best of the week. Had a steak, drinks, soup, sides and dessert. All great, great service.

Sylvestre Polanco was incredible! The food and service were both amazing. I ordered their tamarindo and shrimp dish, and the flavor combination was perfect—so delicious. Their cocktails were amazing too and really completed the meal. I’ll definitely be visiting again once I’m back. Highly recommend!

Beautiful day in CDMX, mid-60's, overcast, perfect for mid-July. After a day at the Museo de Antropologia, then exploring Polanco, this was the perfect place to close out a drizzling evening. The braised octopus was tender, grilled shrimp were fresh and the boneless ribeye also very tender, juicy and grilled to medium rare perfection. Service was impeccable, doting, and a textbook lesson to almost every other restaurant extant (especially Per Se Time Warner Center). The servers were invisible, but miraculously appeared when you needed something. They even changed out the cooling cast iron plate with a hot replacement. Atmosphere was quiet, with a tropical forest terrace and smoking section. Very refined and elegant. We enjoyed 4 hours here eating and chatting. The room was not full, and no one rushed us whatsoever, unbelievable. Totally spoiled now

⭐⭐⭐⭐⭐ Wonderful Evening at Sylvester! My husband, Matt, and I had an incredible dinner at Sylvestre in Polanco! The ambiance was elegant, and we started with their delicious Old Fashioneds , perfectly crafted. As an appetizer, we enjoyed the provoleta cheese , which was a delightful addition that set the tone for the meal. I ordered the filet mignon , and it was absolutely phenomenal—tender, juicy, and cooked to perfection. The Fiji water was a nice touch, adding a bit of luxury to our meal. Our waiter Jerson was the best, providing attentive and friendly service that made our evening unforgettable. Highly recommend Sylvester for a special night out!
